Ingredients

Crust:

  • 1 cup cashews, soaked for 30 minutes
  • ½ cup pumpkin seeds
  • ¼ cup cacao powder
  • 2 tbsp maple syrup
  • Pinch of sea salt

Filling:

  • 2 avocados
  • ¼ cup pure maple syrup
  • ½ cup filtered water
  • ½ cup fresh mint leaves
  • 1½ tsp chia seeds
  • 2 scoops Green Up! With GRAMS

Garnish:

  • ¼ cup dark chocolate, chopped
  • 1 tsp chia seeds
  • Fresh mint leaves

Directions

  1. Begin by placing all crust ingredients in a food processor. Pulse until a crunchy texture is achieved, then set aside.
  2. Next, in a blender, combine all ingredients for the filling. Blend until velvety smooth and creamy.
  3. Ready 4 small to medium-sized glass jars. Start layering with the crust mixture first, followed by the creamy mint filling, and top it off with the garnish.
  4. Refrigerate for at least 2 hours to chill before serving.

Storage tips: Store in an airtight container in the fridge for up to 5 days.
