Zesty Ginger Mashed Sweet Potatoes

Ingredients
- 4 large sweet potatoes
- 1 knob ginger
- 1 orange
- 1 tablespoon olive oil
- 1 teaspoon sage
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 scoops Magnesium Bis-Glycinate 400 Ultra Gentle Powder
Directions
- Start by preheating your oven to 400°F. Pierce your sweet potatoes with a fork. Bake them in the oven for around 1 hour or until soft.
- Once cooled, scoop out the flesh of the potatoes and mash them in a large bowl. Set aside
- Using a microplane, grate about 1/2 the zest from the orange and add to the mix, remove the skin from the ginger and grate it in as well (about 1 tablespoon).
- In a separate bowl, add the juice from the orange and add the magnesium powder (allow it to fizz and activate before adding to the sweet potato mix).
- Add the juice mixture, olive oil and spices to the potatoes and mix well
- Serve as a side alongside your favourite main dish.
