Zesty Ginger Mashed Sweet Potatoes

Ingredients

  • 4 large sweet potatoes
  • 1 knob ginger
  • 1 orange
  • 1 tablespoon olive oil
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 scoops Magnesium Bis-Glycinate 400 Ultra Gentle Powder

Directions

  1. Start by preheating your oven to 400°F. Pierce your sweet potatoes with a fork. Bake them in the oven for around 1 hour or until soft.
  2. Once cooled, scoop out the flesh of the potatoes and mash them in a large bowl. Set aside
  3. Using a microplane, grate about 1/2 the zest from the orange and add to the mix, remove the skin from the ginger and grate it in as well (about 1 tablespoon).
  4. In a separate bowl, add the juice from the orange and add the magnesium powder (allow it to fizz and activate before adding to the sweet potato mix).
  5. Add the juice mixture, olive oil and spices to the potatoes and mix well
  6. Serve as a side alongside your favourite main dish.
