Spicy Kale Edamame Dip

Hey snack squad, ready to dive into our Spicy Kale Edamame Dip?
Dips are great for incorporating loads of nutrients and turning every day veggies into zesty masterpieces. In today’s blender we have: protein packed edamame, fibre-rich kale and creamy avocados for those healthy fats. And the real star? CanPrev’s Myco10! Ingredients
- 4 cups kale, de-stemmed and torn into pieces
- 2 cups shelled edamame (if using frozen edamame, thaw before blending)
- 1 avocado
- 1 jalapeño, chopped and deseeded
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 2 tbsp olive oil
- 1 tbsp honey
- ¼ – ½ cup vegetable broth
- Salt and pepper to taste
- Pinch of chili flakes (optional)
- 3 scoops Myco10 powder
Directions
- Boil a large pot of water and blanch the kale for about 30 seconds. Remove from the pot and add to a bowl of cold water to stop the cooking process.
- Drain the kale and add to a blender along with all the other ingredients except for the vegetable broth.
- Process on high speed adding a little bit of liquid broth as you go to achieve desired consistency.
- Serve with veggies, crackers, or chips and enjoy!
Storage Instructions: Store the dip in an airtight container and keep refrigerated for up to five days.
