Carrot Cake Truffles

Satisfy your sweet tooth with a healthy twist! These no-bake Carrot Cake Truffles combine the warm spices of classic carrot cake with the detoxification support of CanPrev’s Liposomal Glutathione in a nutty orange spice flavour.

Walnuts, dates, and vegan protein make these truffles a nourishing treat, with a drizzle of white chocolate to add just the right amount of indulgence. Ready in just 30 minutes, they’re the perfect grab-and-go snack!

Ingredients

  • 5 Deglet dates, soaked in hot water until soft 
  • 3 carrots, chopped and boiled until soft 
  • 1 cup walnuts 
  • 2 scoops vegan vanilla protein powder
  • 1 cup white chocolate chips 
  • ½ cup shredded unsweetened coconut 
  • 1 cup rolled oats 
  • ¼ cup almond butter 
  • 2 ½  tbsp molasses 
  • 1 tps cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1 tsp ginger 
  • Zest and juice of one orange 
  • 3 packets of Liposomal Glutathione 

Directions

  1. Boil carrots until soft, then set aside to cool. 
  2. Add carrots to a food processor or blender and puree them with a bit of water until a smooth paste forms. 
  3. Add the rest of the ingredients except for the white chocolate and pulse until a dough comes together.
  4. Roll the dough into balls (1½ tbsp in size) and refrigerate.
  5. Melt the white chocolate chips and drizzle over top the truffles to decorate.
