Dark Chocolate Oatmeal Breakfast Bars

These delicious Dark Chocolate Oatmeal Breakfast Bars are perfect for when you have a busy week ahead. Prep one batch and you’ve got a convenient, ready-to-eat breakfast filled with nutrition and energy to fuel your day.

This recipe incorporates CanPrev’s L-Lysine Powder to boost daily nutrition, immune function and energy production. Start the day right with these wholesome bars, or enjoy them as a post-workout snack to support muscle recovery, collagen formation and sustained energy throughout the day.

Ingredients

  • 1 cup gluten-free rolled oats
  • 1 cup almond flour
  • 1 cup Greek yogurt 
  • ½ cup peanut butter
  • ½ cup almond milk
  • ½ cup maple syrup
  • ½ cup dark chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 4 scoops L-Lysine Powder

Optional Toppings:

  • Greek yogurt
  • Mixed berries
  • Peanut butter
  • Melted chocolate sauce

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine wet ingredients, mixing together Greek yogurt, peanut butter, almond milk, maple syrup and vanilla extract.
  3. Combine oats, almond flour, baking powder, baking soda and L-Lysine Powder in a separate bowl. 
  4. Stir together dry and wet ingredients, mixing well.
  5. Fold in chocolate chips separately to distribute evenly.
  6. Pour into a parchment-lined 8 X 8 baking pan and bake for 30-35 minutes until an inserted toothpick in the centre of the bake comes out clean.
  7. Leave to cool before slicing into squares.
  8. Serve warm or cold, with toppings of choice. 

Storage Instructions: Store in an airtight container in the fridge for up to 4 days.
