Chilli Lime Chickpea Bowl

This nutritious Chilli Lime Chickpea Bowl with Smokey Citrus Dressing is calling your name for your next meal!

Ingredients

  • 1 can of chickpeas
  • 1 tablespoon chilli powder
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 2 teaspoons coconut sugar
  • 1 carrot, shredded
  • 1 tomato, diced
  • 1 avocado, sliced
  • ½ red and yellow bell pepper
  • ½ cucumber, chopped
  • ½ a head of iceberg lettuce
  • ¼ red onion, sliced
  • ¼ a head purple cabbage
  • Cilantro to garnish

Dressing

  • 2 tsp. honey
  • 2 tbsp. olive oil
  • 1 tbsp. lime juice
  • 1 tsp. paprika
  • 1 tsp. chipotle powder
  • 1 teaspoon salt
  • 2 tbsp. Liposomal GABA

Directions

  1. Drain, rinse and dry canned chickpeas. Toss with the spices and oil and roast on a parchment lined baking sheet for about 20 minutes at 350 degrees or until they are crunchy and golden.
  2. Chop up the contents for the rest of the bowl.
  3. Shake all dressing ingredients together in a jar until smooth.
  4. Assemble your bowl with the chickpeas, veggies, and dressing.
