PB&J Ice Cream Sandwiches

These gluten-free and dairy-free PB&J Ice Cream Sandwiches are delicious and nostalgic, making them the perfect comfort food.
Sandwiched between the peanut butter cookies, is the fruity ice cream filling infused with CanPrev’s Liposomal NAC in a delicious strawberry flavour. Who knew a treat this tasty could be bursting with antioxidants to fight inflammation and support detoxification?! The recipe itself is easy to make, it simply requires a bit of forethought and patience. Trust us, it’s worth it!

Ingredients
Peanut Butter Cookies:
- 1 cup natural peanut butter
- ½ cup brown sugar
- ¼ cup cane sugar
- 3 tbsp gluten-free flour
- 1 large egg
- Pinch of salt
- 1 tsp vanilla extract
Ice Cream Filling:
- 2 cups frozen strawberries
- 1 can full fat coconut milk
- ¼ cup cane sugar
- 2 tbsp cashew butter
- 3 tbsp Liposomal NAC
Directions
For the Peanut Butter Cookies:
- In a medium-sized bowl, mix peanut butter and sugar together. Add the egg and vanilla, mixing well. Gradually stir in the gluten-free flour and salt to form a dough.
- Cover the cookie dough and refrigerate for one hour.
- Preheat the oven to 325°F. Shape the chilled dough into 12 balls, and flatten with a fork on a lined baking sheet. Bake for 10 minutes until they turn golden. Set cookies aside to cool.
For the Ice Cream Filling:
- In a high-speed blender, blend together all filling ingredients until a smooth consistency is achieved. Pour the mixture into a square baking pan lined with plastic wrap and freeze for at least 4 hours, or until the mixture becomes firm.
- Once frozen, use a round cookie cutter to create ice cream ‘pucks’ for assembling the sandwiches.
- Assemble the ice cream sandwiches by sandwiching the ice cream pucks between two cookies. Serve immediately.
Storage Instructions: Store ice cream sandwiches in the freezer for up to 4 weeks.
