Ingredients

Crust ingredients 

  • 1 cup Medjool dates, pitted
  • 1 cup cashews
  • 1 cup pecans
  • ½ cup pumpkin seeds
  • ½ cup unsweetened shredded coconut
  • ¼ cup smooth almond butter
  • Pinch of salt

Filling ingredients 

  • 1½ cups Greek yogurt
  • cup coconut sugar
  • ¼ cup coconut cream (the white solid part)
  • Zest and juice of 2 limes
  • 1 avocado, pitted
  • 1 tsp vanilla extract
  • 2 tbsp Omega Twist Lime-Licious

Directions

  1. To make the crust, soak dates in hot water for about 10 minutes to soften.
  2. In a food processor, add pecans, cashews, and pumpkin seeds and pulse to resemble a crumb-like texture. Add softened dates, coconut, almond butter, and salt and pulse to combine, forming a sticky dough.
  3. Press the mixture into a parchment-lined, square baking pan to create an even base. Set aside.
  4. To make the filling, add all ingredients to a blender and process on high speed until smooth and creamy.
  5. Pour the filling on top of the crust, spreading evenly.
  6. Sprinkle with lime zest for garnish and freeze for at least 8 hours before serving.
