No-Bake Key Lime Yogurt Bars

Make these tangy No-Bake Key Lime Bars loaded with brain-boosting healthy fats to enhance cognitive function.

Ingredients
Crust ingredients
- 1 cup Medjool dates, pitted
- 1 cup cashews
- 1 cup pecans
- ½ cup pumpkin seeds
- ½ cup unsweetened shredded coconut
- ¼ cup smooth almond butter
- Pinch of salt
Filling ingredients
- 1½ cups Greek yogurt
- ⅓ cup coconut sugar
- ¼ cup coconut cream (the white solid part)
- Zest and juice of 2 limes
- 1 avocado, pitted
- 1 tsp vanilla extract
- 2 tbsp Omega Twist Lime-Licious
Directions
- To make the crust, soak dates in hot water for about 10 minutes to soften.
- In a food processor, add pecans, cashews, and pumpkin seeds and pulse to resemble a crumb-like texture. Add softened dates, coconut, almond butter, and salt and pulse to combine, forming a sticky dough.
- Press the mixture into a parchment-lined, square baking pan to create an even base. Set aside.
- To make the filling, add all ingredients to a blender and process on high speed until smooth and creamy.
- Pour the filling on top of the crust, spreading evenly.
- Sprinkle with lime zest for garnish and freeze for at least 8 hours before serving.
