Grilled Peaches & Coconut Cream

Ingredients
Peaches
- 3 peaches, halved
- Oil or melted butter, for brushing
- 2 tablespoons maple syrup or other liquid sweetener (agave, honey)
- ½ teaspoon cinnamon powder
Coconut Cream
- 1 can coconut cream (398 mL), separated from water
- 2 teaspoons vanilla
- Pinch of salt
- Sweetener of choice, to taste
- 3 scoops L-Glutamine
Toppings
- Cinnamon powder
- Crushed nuts
Directions
- Whisk the coconut cream until smooth. Add in L-Glutamine and whisk again until smooth. Pour in the sweetener of your choice and vanilla, and add a pinch of salt. Whisk until combined. Keep refrigerated until ready for use.
- Heat a pan on medium heat. Brush the cut side of the peaches generously with oil or melted butter and place them cut-side down in the pan. Cook them for 5 to 7 minutes, brushing the top side with oil or melted butter in the meantime.
- While the peaches are cooking, mix together the maple syrup and cinnamon in a small bowl until combined.
- Flip the peaches, and brush the cut side with the maple syrup/cinnamon mixture. Turn off the heat, and let the peaches cook for a few more minutes on the heat until softened.
- Remove the peaches from the pan, letting them cool (completely or just warm). Add a generous scoop of the coconut cream on top, and if desired, sprinkle on more cinnamon and top with crushed nuts of choice.
