Chimichurri Corn Salad

This Chimichurri Corn Salad is a tasty way to sneak in all those
extra antioxidants with CanPrev’s Green Up with GRAMS!

Ingredients

Dressing

  • 1 cup fresh parsley, chopped finely
  • 1 cup fresh cilantro, chopped finely
  • ½ cup fresh basil, chopped finely
  • ⅔ cup olive oil
  • 1 tablespoon dried oregano
  • 4 tablespoons red wine vinegar
  • 2 lemons, juiced
  • 1 teaspoon red pepper flakes
  • 2 shallots, finely diced
  • 5 cloves garlic, finely diced
  • 1½ scoops Green Up with GRAMS powder

Salad

  • 3 cups corn (frozen or fresh)
  • ½ cup feta cheese, crumbled
  • 1 red bell pepper, diced
  • ½ red onion, diced
  • 1 pint cherry tomatoes, sliced
  • 2 avocados, diced

Directions

  1. To make the dressing, combine all the ingredients into a blender and process until it all comes together (you can also use a hand blender to process). Set aside.
  2. Combine all the ingredients for the salad and toss well. Add the dressing just before serving.
