Chimichurri Corn Salad

This Chimichurri Corn Salad is a tasty way to sneak in all those

Ingredients
Dressing
- 1 cup fresh parsley, chopped finely
- 1 cup fresh cilantro, chopped finely
- ½ cup fresh basil, chopped finely
- ⅔ cup olive oil
- 1 tablespoon dried oregano
- 4 tablespoons red wine vinegar
- 2 lemons, juiced
- 1 teaspoon red pepper flakes
- 2 shallots, finely diced
- 5 cloves garlic, finely diced
- 1½ scoops Green Up with GRAMS powder
Salad
- 3 cups corn (frozen or fresh)
- ½ cup feta cheese, crumbled
- 1 red bell pepper, diced
- ½ red onion, diced
- 1 pint cherry tomatoes, sliced
- 2 avocados, diced
Directions
- To make the dressing, combine all the ingredients into a blender and process until it all comes together (you can also use a hand blender to process). Set aside.
- Combine all the ingredients for the salad and toss well. Add the dressing just before serving.
