Blueberry Breakfast Squares

Ingredients

  • 4 eggs, separated
  • ¾ cup liquid egg whites
  • ½ cup coconut flour
  • ¼ cup Greek yogurt
  • ¼ cup sugar free, granulated sweetener such as erythritol or allulose
  • 1 tsp baking powder
  • 1 tsp stevia extract
  • 1 tsp vanilla extract
  • ½ tsp Celtic sea salt
  • ½ tsp Ceylon cinnamon
  • 2 tbsp Liposomal GABA

Directions

  1. Preheat oven to 350 F. Add the egg whites from the separated eggs and liquid egg whites to a large bowl. Place the egg yolks in a small bowl. Set aside.
  2.  In another small bowl, add the dry ingredients. Stir to combine.
  3.  Whip the egg whites on high for 5 minutes or until stiff peaks form.
  4. In the bowl with the egg yolks, add the Greek yogurt and vanilla.
  5. Add both the yolk mixture and dry mixture to the egg whites. Pulse on lowest settings to gently incorporate and stir to fold in the ingredients.
  6. Line an 8×8” square pan with parchment paper and scoop batter into the pan. Bake for 30 minutes (These can also be baked as muffins! Bake in a lined muffin tin for 20-22 minutes at the same oven temperature.)
  7. Remove breakfast squares from the oven and let cool. Drizzle Liposomal GABA on top.

Storage Instructions: Store in the fridge for up to one week.
