Chilled Raspberry Coconut Squares

Savour these creamy Chilled Raspberry Coconut Squares to keep you feeling youthful from the inside out. As we get older, we break down collagen faster than we can produce it, causing wear and tear on our muscles, tendons, cartilage, joints, bones, and skin.

Ingredients
Raspberry Base
- 500g Greek yogurt
- 1 cup unsweetened shredded coconut
- ¾ cup raspberries
- ½ cup vanilla protein powder
- ¼ cup coconut flour
- 1 tsp stevia extract
- 6 scoops Collagen Full Spectrum Powder
Coconut Fudge Topping
- ¼ cup coconut butter, melted
- 2 tbsp sesame butter or tahini
- 2 tbsp maple syrup
- ¼ tsp vanilla extract
Directions
- Add all raspberry base ingredients to a medium-sized bowl and mix until combined. The mixture will continue to thicken.
- Line a square 8” x 8” pan with parchment paper. Evenly scoop the base mixture into the pan and smooth the top. Freeze for 10 minutes.
- In the meantime, combine the coconut fudge topping ingredients in a small bowl.
- Remove the pan from the freezer and spread the fudge topping over the base layer. Cut into squares before freezing for another 2 hours to set.
- Serve chilled and enjoy!
Storage Instructions: Store in an airtight container in the freezer for up to 4 weeks.
