Tofu Veggie Bowl

This Tofu Veggie Bowl is a quick and easy lunch or dinner option to keep you satisfied. Packed with protein, fibre, and rich in vitamin B12 from the nutritional yeast, this bowl will keep you energized to tackle your day.

Ingredients

For the bowl:

  • 170g firm tofu, cubed
  • 2 tbsp nutritional yeast
  • 2 cups shredded cabbage
  • ½ cup chopped celery
  • ½ cup red pepper, sliced thin
  • ½ cup cucumber, sliced thin
  • ½ tsp everything bagel seasoning
  • ½ tsp salt
  • 1 capsule Curcumin Unlocked

For the sauce:

  • 1 tbsp gluten-free tamari
  • 2½ tbsp sugar-free peanut butter powder
  • ½ tsp garlic powder
  • 1 tbsp maple syrup
  • ½ tsp apple cider vinegar
  • 1 tbsp water

Directions

  1. In a medium-sized bowl, toss cabbage and salt to release moisture.
  2. Mix nutritional yeast, everything bagel seasoning and contents of Curcumin Unlocked in a small bowl.
  3. Sprinkle mixture over tofu cubes and toss to coat. Note that the tofu in this recipe is served raw.
  4. Place the tofu over cabbage and add the remaining vegetables to the bowl.
  5. Assemble the veggie bowl by arranging tofu over the cabbage and adding the remaining vegetables to the bowl.
