Roasted Cauliflower Hummus

This low-carb Roasted Cauliflower Hummus makes a delicious legume-free alternative to hummus. You will never suspect that it’s made with cauliflower! Each serving provides healthy fibre, minerals, and vitamins, including high amounts of vitamin C to support collagen formation.

With the addition of CanPrev’s Collagen Bone Powder, this hummus alternative provides all the necessary nutrients needed for collagen formation in the bones, delivering additional vitamin D3, K2, calcium, and magnesium to improve bone density.

Ingredients

  • 1 cup cauliflower rice, fried
  • 3 tbsp tahini
  • 3 tbsp fresh squeezed lemon juice
  • 1 clove garlic, minced
  • ½ tsp Celtic sea salt
  • 2 scoops CanPrev Collagen Bone Powder


Garnish with:

  • Extra virgin olive oil
  • Fresh parsley

Directions

  1. Pan-fry cauliflower rice on low heat until cooked through. Set aside to cool.
  2. Add cooled cauliflower rice along with remaining ingredients to a food processor and pulse until desired consistency is achieved.
  3. With a spatula, scoop into a serving bowl and chill for one hour in the refrigerator.
  4. Once chilled, garnish with extra virgin olive oil and parsley before serving. Enjoy as a dip or spread with veggies and crackers.

Storage Instructions: Store in an airtight container in the refrigerator for up to 3 days.
