Pumpkin Caramel Fudge Bars

These Pumpkin Caramel Fudge Bars won’t last long! This recipe incorporates CanPrev’s Myo-Inositol and Omega Twist in a Tangerine Tang flavour to help support healthy glucose metabolism and hormone regulation. These functional ingredients pair perfectly with this dessert to help balance blood sugar levels and prevent the energy crash that many people experience after indulging in sweets.

Ingredients

Base Layer

  • 1 cup nut butter of choice
  • cup maple syrup
  • cup coconut sugar
  • cup coconut flour
  • 1 scoop plant-based protein powder
  • 1 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 tsp pink salt
  • 5 scoops Myo-Inositol

Pumpkin Caramel Filling

  • 9 Medjool dates
  • cup canned pumpkin purée
  • 2 tbsp coconut cream
  • 1 tbsp pumpkin pie spice
  • 1 tsp ginger
  • 2 tbsp Omega Twist – Tangerine Tang

Chocolate Topping

  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • Salt, to taste

Directions

  1. In a small bowl, cover Medjool dates with hot water, and set aside for 10 minutes while making the base layer.
  2. To make the base layer, melt coconut oil and nut butter together in a small saucepan. Stirring constantly, add maple syrup and sugar. Whisk in the remaining ingredients until a dough is formed.
  3. Press the base layer into a baking dish and allow it to firm in the freezer while you prepare the filling.
  4. For the pumpkin caramel filling, mash the soaked dates with a fork to make a smooth paste. Add in the remaining ingredients. Spoon the mixture evenly onto the base layer and return to the freezer to chill while you prepare the chocolate coating.
  5. To make the chocolate coating, melt the chocolate together with the coconut oil in a double broiler over medium heat.
  6. Pour melted chocolate over the pumpkin layer. Sprinkle with pink salt and allow to freeze for at least 8 hours.
  7. Cut into bars and enjoy cold!

Storage instructions: Store in the freezer in an airtight container for up to 2 months.
