Mediterranean Whipped Feta Dip

Take your taste buds on a savoury adventure with this Mediterranean Whipped Feta Dip, featuring the CanPrev’s Myco10 Immunomodulating Mushroom Complex. Ingredients

Roasted tomatoes & garlic:

  • 250g cherry tomatoes
  • 3 sprigs of thyme
  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, finely sliced
  • 1 tbsp balsamic vinegar

Whipped Feta dip:

  • 200g crumbled feta
  • 6 tbsp cream cheese
  • 2 tbsp extra virgin olive oil
  • Zest from ½ a lemon
  • 3 scoops Myco10 

To serve:

  • A drizzle of honey
  • fresh basil leaves 
  • Griddle-fried ciabatta
  • Salt & pepper

Directions

  1. Preheat the oven to 350 F.
  2. In a small baking dish, add the tomatoes, sliced garlic, and thyme. Drizzle over the olive oil and balsamic vinegar and toss to combine. 
  3. Roast for 30 minutes until the tomatoes are blistered and starting to burst. Remove the tray from the oven and take out the thyme stalks. Set aside to cool to room temperature.
  4. To make the whipped feta, add the feta, cream cheese, Myco10, lemon zest and olive oil to a small food processor and pulse for 3 to 4 minutes until smooth. 
  5. To serve, spread the whipped feta over the base of a medium serving plate. Spoon over the roasted tomato and garlic mixture.
  6. Drizzle lightly with honey, garnish with fresh basil and season with a sprinkle of sea salt and pepper.
  7. Serve with golden griddle-fried ciabatta, and enjoy!
