Hummingbird Cheesecake Truffles

Ingredients
Chocolate Layer
- 1 cup dates
- 1 cup cashews
- 1 cup pecans
- ½ cup oat flour
- ½ lemon, juiced
- 1 ripe banana
- 1 teaspoon cinnamon
- 2 scoops MuscleRescue Pineapple Punch
Coating
- 1 cup Greek yogurt
- 1 ripe banana, mashed
- ½ teaspoon cinnamon
Directions
- Soak the dates and cashews in hot water for about an hour or until soft, and then drain.
- Add all the truffle ingredients to a blender or food processor and pulse until a smooth dough forms.
- Roll the dough into balls and place on a tray in the freezer. Meanwhile, combine all the ingredients for the coating.
- Roll the balls in the yogurt coating.
- Add them back into the tray and let them set in the freezer for about 1 hour or until the coating is set.
