Cream of Cauliflower Soup

This warming Cream of Cauliflower Soup is perfect on a cold night or for whenever you need a bowl full of comfort.

Ingredients

  • 1 large head of cauliflower, chopped into pieces
  • 1 large white onion, sliced
  • 10 cloves of minced garlic
  • 2 carrots shredded
  • 1 litre vegetable stock
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 4 scoops L-Glutamine powder

Directions

  1. Begin by heating 2 tablespoons of olive oil in a large stock pot.
  2. Add the onion and cook until translucent, then add the garlic.
  3. Cook over medium heat until fragrant and soft.
  4. Add the cauliflower, carrots, vegetable stock, salt and pepper. Let
    the mixture cook on medium heat for about 30 minutes until the vegetables are tender.
  5. Remove from heat and let the mixture cool. Add everything into a blender (or use a hand blender) and process on high until smooth and creamy.
  6. Add in the coconut milk as well as the L-Glutamine and blend again.
