Coconut Mug Cake

With this Coconut Mug Cake, you can have your cake—that stimulates healthy probiotic bacteria—and eat it, too!

Made with CanPrev’s Fibre Feel powder, it’s not only tasty but also helps keep digestion smooth and regular. Whenever your sweet cravings hit, keep this recipe on hand for a delicious single-serving dessert ready in less than 2 minutes.

Ingredients

  • ¼ cup all-purpose flour
  • 3 tablespoons milk of choice
  • 2 tablespoons butter or coconut oil
  • 1 tablespoon toasted coconut flakes
  • 1 tablespoon maple syrup
  • ½ teaspoon coconut extract (or vanilla extract)
  • ¼ teaspoon baking soda
  • 1 scoop of Fibre Feel
  • Pinch of salt

Directions

  1. In a mug, stir together the flour, baking soda, coconut flakes, Fibre Feel, and salt.
  2. Melt the butter or coconut oil in a small container. Mix in the maple syrup, milk, and coconut extract. Pour into the mug and mix well with a butter knife, making sure to get to the sides as well, so everything is well combined.
  3. Microwave for 70 to 90 seconds, and let the cake sit (and continue to cook) for at least 1 minute.
  4. Top with whipped coconut cream and/or toasted coconut flakes and enjoy!
