Tropical Protein Coconut Bites

These Tropical Coconut Protein Bites featuring CanPrev MuscleRescue are bursting with island vibes and functional nutrition.

They’re gluten-free, dairy-free, and refined sugar-free, and ready in under 15 minutes! Perfect for a tropical escape and a protein boost.

Ingredients

  • 1 cup unsweetened shredded coconut (plus ½ cup for rolling)
  • ½ cup almond butter
  • 2 tablespoons dried pineapple chunks (unsweetened if possible)
  • 2 tablespoons hemp seeds
  • 2 tablespoons coconut flour
  • ½ a lime, zested
  • 1 lime, juiced
  • 1-2 tablespoons pure maple syrup
  • 2 scoops MuscleRescue Pineapple Punch

Directions

  1. In a food processor, add all ingredients, leaving about an extra ½ cup of unsweetened shredded coconut for rolling.
  2. Add 1 tablespoon of water at a time, mixing until a dough-like consistency forms. It should stick together without being too wet.
  3. Roll into 1-inch balls, then roll in extra shredded coconut for a tropical coating.
  4. Refrigerate for 30 minutes to firm up.
  5. Store in the fridge for up to 1 week or freeze for longer shelf life.
