Matcha Coconut Macaroons

These gluten-free Matcha Coconut Macaroons sneak in benefits for the whole body.
The delicious white chocolate coating incorporates CanPrev’s Collagen Full Spectrum to give the macaroons sweet benefits besides their sweet taste! Ingredients
- 1½ cups unsweetened shredded coconut
- ½ cup coconut flour
- ⅓ cup coconut sugar
- ⅓ cup water
- 3 tbsp honey
- 2 tbsp coconut oil, melted
- 1 tbsp matcha powder
- 1 egg white, beaten
- ½ cup white chocolate chips
- 3 scoops Collagen Full Spectrum
Directions
- Preheat the oven to 325F.
- In a large bowl, mix together all ingredients (except for the chocolate chips and collagen powder) until thoroughly combined. The mixture will be crumbly, but moist enough to hold its shape when moulded.
- Form the mixture into 12 dome-shaped half spheres and arrange on a parchment-lined baking sheet.
- Bake for 15-20 minutes, until lightly toasted.
- While the macaroons are cooling, melt the white chocolate chips, stirring in the Collagen Full Spectrum once melted. Dip the macaroons into the chocolate mixture to coat the bottom half of each cookie. Use the leftover chocolate to decorate and let cool completely before enjoying.
Storage instructions: Store in an airtight container in the fridge for up to 1 week.
